Chimichurri, Steak and Burrata Salad

This is the perfect summer salad in my mind! Delicious grilled steak, creamy burrata, peppery arugula and tangy chimichurri complement each other so well!


Ingredients:

For the Chimichurri:

1/4 cup olive oil

1/4 cup packed chopped cilantro

2 Tablespoons red wine or rice vinegar

1 clove garlic, minced

1/2 teaspoon lemon juice

1 pinch salt

2 Tablespoon chopped green onion

3 Tablespoons chopped oregano

1 pinch red pepper flakes


Other Ingredients:

2 cups arugula salad mix

1 ball burrata cheese

10 oz flank steak


Step 1: Prepare the chimichurri by combining all ingredients in a blender and blending on high for about 10 seconds, until you have a smooth sauce with some larger pieces of herbs


Step 2: Grill or pan fry the steak to your desired done-ness. Season with salt and pepper to taste. Let it rest for about 10 minutes until you cut it.


Step 3: Slice the steak against the grain into strips. Lay down a bed of arugula, then place on the strips of steak. Drizzle the chimichurri over the steak and arugula. Place the burrata on top and drizzle it with chimichurri as well. Enjoy!
