The BFG (Balsamic, Fig and Goat cheese) Tart

We're saying goodbye to summer in a matter of weeks, and this summer has brought a strange mix of joy, sorrow, laughter, friendship and learning to my life, as I'm sure it has for many of you also! I'm not quite ready to say goodbye yet, so I created this dinner to remind me of the sweetness summer brings. Figs are one of my absolute favorite fruits, and I was so excited to work with them! Enjoy!

Serves 4

Ingredients:

For the puff pastry crust (Recipe from Baking A Moment) :

2 cups all purpose flour

2 and 1/2 sticks of cold unsalted butter

1 teaspoon salt

1/2 cup cold water

For the filling:

4 strips of bacon

8 fresh figs, cut in half lengthwise

1/4 log of goat cheese (about 1/2 cup) of your choice

1 large red onion

2 Tablespoons butter

1Tablespoon olive oil

1 and 1/2 Tablespoons balsamic vinegar

1/2 teaspoon honey

1 pinch salt


Step 1: Make the puff pastry and let it chill ( or buy it from the store and follow the directions on the box). Slice the onion into thin rings, then cut the rings in half. Sautee the onions in the butter and oil and salt on low heat until caramelized. Then add the balsamic vinegar and honey and cook for another 2 minutes.

Step 2: Preheat the oven to 400F. Cook the bacon so it's no longer raw, but also make sure it's not too crispy or burnt (about 2 minutes on each side) then cut it into small chunks. Roll out the puff pastry into a rectangle, about 8 inches wide by 5 inches long.

Step 3: Crumble the goat cheese all over the puff pastry, leaving about a 1 inch border at each edge. Then distribute the onions evenly across the cheese, then the bacon, and lastly place the figs on top.

Step 4: Bake for about 30 minutes, until the pastry is lightly golden and crisp. Serve warm or eat at room temperature! Enjoy!
