The Ultimate Fudgy Cinnamon and Coffee Brownies

In my house, we like really fudgy brownies, so I set out to create a brownie recipe that would satisfy our cravings and incorporate some of our favorite flavors, coffee and cinnamon. The result is this deliciously rich chocolatey brownie with a cinnamon-y kick. Best served warm with vanilla ice cream.


Ingredients:

1 cup chopped bittersweet, semisweet or dark chocolate of your choice

10 Tablespoons (1 and 1/4 sticks) unsalted butter, melted and cooled

1 cup white sugar

2 eggs

1 Tablespoon plus 2 teaspoons brewed black coffee, cooled

1/4 cup cocoa powder

1 and 1/2 teaspoons vanilla extract

1/4 teaspoon cinnamon

3/4 cup all purpose flour

1/4 teaspoon salt

A handful of chocolate chips to sprinkle over the top before baking


Step 1: Preheat the oven to 350 F and grease an 8x8 square pan or line with parchment paper. In a small bowl, combine the flour, salt, cinnamon and cocoa powder.


Step 2: In a separate bowl, mix together the melted butter, sugar, vanilla, coffee, and eggs.


Step 4: Melt the 1 cup of chocolate over a double boiler or in the microwave in 20 second increments. Let the chocolate cool for about 2 minutes, then add to the wet ingredients.


Step 5: Add the dry ingredients to the wet ingredients, and once fully combined, add the chocolate chips. Pour this mixture into the prepared pan and bake in the preheated oven for 25-30 minutes.
